Mini Tarts Recipe

This recipe will work with any of our wonderful jams, but I like Christmas in June jam because it covers all seasons. Top with strawberries when they’re fresh or sugar some cranberries when they’re in season! 

Crust (or use your favorite recipe or a packaged roll out dough) 

1 cup flour 

1/4 cup oats 

1 cup sugar 

½ cup butter 

1 egg yolk, beaten 

½ tsp Cozy Chick Mix 

Filling 

3 oz cream cheese, softened 

¼ cup butter, softened 

2 tbsp sugar 

1 egg 

1 tbsp orange juice 

¼ cup ground graham crackers 

Orange zest 

¼ cup Christmas in June Jam 

Fresh sliced strawberries, optional 

Dried or Sugared cranberries, optional 

  1. Stir together the flour, oats, and ¼ cup sugar. Cut in small cubes of cold butter until pea sized crumbles form. Combine egg yolk and 1 tsp water, then add to the dough mixture. Add in Cozy Chick Mix. Add more water until dough comes together, if needed. Wrap in plastic and chill for 30 minutes. 
  2. In another bowl beat cream cheese, ¼ cup softened butter, and 2 tbsp sugar until light and fluffy. Add in egg, orange zest and orange juice. Stir in graham crackers. 
  3. Preheat the oven to 350 degrees and grease a mini muffin pan. Divide dough into 24 portions, shape into balls and press onto the bottoms and up the sides of muffin cups. 
  4. Spoon ¼ to ½ tsp of jam into a pastry lined cup. Spoon filling over jam. Bake for 25 minutes or until filling is set. Cool in pan for 5 minutes then remove from cups and finish cooling on a rack. 
  5. Top each with either strawberries or cranberries, or both!
