Pumpkin Butter Bread Recipe
1 c Chickarelli Farms Pumpkin Butter
1 c pumpkin puree
¾ c vegetable or melted coconut oil
¼ c maple syrup
3 eggs
1 T vanilla extract
3 c flour
2 t baking powder
½ t baking soda
2 t Cozy Chick Mix
½ t kosher salt
8 oz cream cheese, whipped
¼ c cinnamon sugar
- Preheat the oven to 350 degrees. Grease 2 bread loaf pans.
- Mix together pumpkin butter, pumpkin puree, oil, maple syrup, eggs, and vanilla extract until combined.
- In another bowl combine flour, baking powder, baking soda, Cozy Chick Mix, and salt. Mix together with pumpkin mixture from Step 2.
- Divide half of the batter evenly between the 2 pans. Spoon small amounts of cream cheese on each loaf and swirl into batter. Sprinkle half of the cinnamon sugar on each loaf.
- Spoon remaining half of batter on top of each loaf and sprinkle with remaining cinnamon sugar.
- Bake for 40-45 minutes, until the loaf is set.
- Remove loaf and let it cool.
Extra touch- serve with a drizzle of warm honey butter.
(stir together 4 T salted butter, 2 T honey, pinch of Cozy Chick Mix)
Option- Apple Butter Bread- replace pumpkin butter with Chickarelli Farms Rum Apple Butter and pumpkin puree with applesauce, reduce oil to ½ cup.
